I’m a big fan of the financial website LearnVest
. Recently, they started emailing me recipes in addition to their usual financial pearls of wisdom. I can’t complain; usually, the recipes are formulated to be cheap, yet delicious. I like both cheap and delicious things, and so, I made rhubarb yogurt muffins using their cake recipe
last week. They came out great, and had a great balance of tart and sweet. I sprinkled the tops with sugar in the raw before I baked them to give them a crunchy sugar topping.
I chose to bake this cake in muffin form because it seemed like a good way to make believe that it could be a viable breakfast option. See this Jim Gaffigan clip
